Vanilla marshmallows
Delicious and simple marshmallows with the addition of vanilla, is made according to the standard recipe GOST. Therefore, do not be afraid to delight yourself and even the smallest representatives of your family with such a marshmallow.
Ingredients:
- 3 cups of sugar.
- 0.250 ml of filtered water.
- 20 g of gelatin.
- 1 teaspoon of citric acid.
- A teaspoon of baking soda.
- 1 cup icing sugar.
- 1 packet of vanillin.
Cooking process:
- To begin with, gelatin should be soaked. Gelatin must be powder so that it swells faster in water. Stir it in 150 ml of cold purified water and leave for about one hour until swelling.
- Then heat 100 ml of purified water in a saucepan and add sugar. Stir well and bring to a boil. Cook sugar until you cook a not very thick syrup. After ready, pour hot syrup into gelatin and with a mixer or blender beat the contents until light.
- Then add citric acid, vanillin and soda and beat for another five minutes. Then, using a culinary syringe and a special curly nozzle, take the mixture and squeeze it in small portions onto a baking sheet moistened with water. After the marshmallow has dried, combine it with the second half and roll in icing sugar.
Marshmallow with applesauce
Ingredients:
- 200 grams of applesauce.
- 300 grams of sugar.
- 1 protein (egg)
- 100 ml of water.
- 4 g. Agar-agar.
Cooking process:
To make good mashed potatoes from apples, you need to wash them and cut out the seed heart inside. After baking apples in the oven or microwave, then allow to cool and peel. Then grind the apples on a grater, until a state of fine mashed potatoes. After that add sugar to it, and once again mix everything thoroughly.
Beat egg white with a mixer and add it to our puree. Mix well. Pour water into a pan and add agar-agar. Bring to a boil and add sugar well while mixing future syrup. Cook the syrup over low heat so that the syrup does not burn.
After hot syrup, pour in applesauce with sugar and mix well. When the composition thickens, begin to beat it with a mixer for about seven minutes. Using a cooking syringe, put the marshmallow on the plates with water and let the marshmallow cool.
Baked marshmallows in the oven.
Ingredients:
- 20 grams of gelatin.
- 3 cups of sugar.
- 1 cup of water.
- A teaspoon of citric acid.
- A teaspoon of soda.
- 100 grams of powdered sugar.
Cooking process:
- In order for gelatin to swell well, it must be poured with cold water and left for about one hour.Then we pour some water into the pan, mix it with sugar and bring to a boil. Stir our composition until the syrup is ready. After we pour it into it our swollen gelatin, boil it for one minute and remove from heat. Mix well with a mixer for ten minutes.
- Add lemon, soda, vanilla and stir for about another five minutes. Wet the baking sheet with water and using a spoon, if you do not have a confectionery syringe, spread the mass on a baking sheet. Serving size will depend on you how you want your finished marshmallows to be. The temperature in the oven should be no more than 120 degrees.
- Leave the marshmallows dried in it for 30-40 minutes. When the marshmallow is ready, form whole marshmallows from the halves or serve on the table in halves, as you prefer. Sprinkle the marshmallows with powdered sugar.
Banana puree marshmallows
Ingredients:
- 450 grams of sugar.
- 5 grams agar agar.
- 250 grams baby puree (banana)
- 1 egg white.
Cooking process:
To begin with, mashed potatoes should be boiled so that water comes out of it and the mashed potatoes thickened more strongly. If you do not want to take baby puree, then you can take one banana and beat its pulp well with a blender. When the mash is ready, add a little powdered sugar to it.
Then mix agar agar in a bucket of water and let it brew for about 10 minutes.
Then put the ladle on the fire and bring to a boil.
Add sugar and boil for about eight minutes.
Add half the protein to the banana puree and beat well with a mixer. Then add the other half and continue whisking until the composition turns white and becomes more magnificent.
After very slowly, pour a thin stream of water with agar-agar. We begin to beat the mixture with the mixer at high speed until the mixture thickens as seen in the photo. Be sure to whip the mass precisely to such a state, otherwise, when the marshmallow is formed, the mass simply spreads.
We collect the finished mass in a culinary syringe and place the mass on a baking sheet covered with parchment. If desired, food coloring can be added to the marshmallows.
After we leave the marshmallows for a day, and then peel off the marshmallows from the paper, fasten the halves together and sprinkle with powdered sugar.
Chocolate Marshmallows
Ingredients:
- 2 teaspoons of gelatin.
- 1 cup of water.
- 3 tablespoons of honey.
- 100 grams of chocolate 70%.
Cooking process:
- Pour gelatin with cold water and wait for it to swell. After we add sugar to it and put it languishes on a small fire. Periodically mix the composition and cook until the syrup is ready.
- After cool the syrup and melt the chocolate. Using a mixer, stir the gelatin syrup, honey and chocolate well. It takes about ten minutes to knead to get a uniform consistency. Next, pour the finished mixture into molds and let the future marshmallow infuse in the refrigerator for one hour. After the finished marshmallows, you can sprinkle with grated cocoa or powdered sugar.
Marshmallow cake
Ingredients:
- 1 kg. Sahara.
- 20 grams of citric acid.
- 25 grams of gelatin.
- 5 grams of baking soda.
- 6 grams of vanilla sugar.
- 300 ml of purified water.
- 100 grams of any nuts.
- 150 grams of dark chocolate.
- 0.5 ml cream (33%)
- 100 grams of strawberries (or other berries)
- 200 grams of pineapple.
- 100 grams of butter.
- 100 grams of powdered sugar.
Cooking process:
- To begin with, it’s worth preparing the marshmallow itself, which afterwards will be the main one for our future cake. Marshmallows should be made in advance, about a day before you decide to make a cake out of it. To do this, mix gelatin with water and leave to swell for about two hours. In another plate, soak sugar and water in water and leave for two hours.
- After that, sugar and water should be put on low heat and constantly stirring to simmer for ten minutes.
- When the syrup is ready, you need to add gelatin to it and remove the mixture from the heat. Beat the composition with a mixer at high speed for ten minutes. Then add a lemon, soda, and also vanilla sugar and beat for about ten minutes.
- After leaving the mass for thirty minutes, and then lay the mixture with a spoon or using a cooking syringe on a baking sheet covered with parchment. Put the marshmallows in the refrigerator overnight.
- Getting to the formation of the cake. Nuts need to be fried in a pan without adding oil, grate chocolate on a fine grater, cut strawberries and pineapple into small cubes.
- Beat cream with a mixer until air foam appears. Put slices of marshmallows on a large dish and grease them with whipped cream. On top of them lay a layer of nuts, fruits and chocolate. Alternate layers until all ingredients are complete.
- After the remaining chocolate, combine with three tablespoons of water and add the butter and powdered sugar to it. Put the composition on a slow fire and boil until a chocolate coating forms. Pour the icing on the cake, and the top of the cake can be decorated with a piece of strawberry or half a marshmallow. Put the cake in the refrigerator for six hours.
Marshmallow Berry
Ingredients:
- 200 grams of sugar.
- 10 grams of gelatin.
- 1 egg white.
- 200 grams of cream (33%)
- 200 grams of berry syrup.
- 100 grams of powdered sugar.
- 2 grams of citric acid.
Cooking process:
- Pour berry syrup into a deep bowl and mix with sugar. Then you need to cook the composition over low heat, stirring constantly, until our syrup is completely thickened.
- Beat the whites with a mixer and add a lemon to them. Whisk for a couple more minutes and add whipped cream to it. After gelatin, you need to fill in with cold water and leave for one hour until complete swelling.
- In the finished syrup, add whipped cream and protein, swollen gelatin and mix well.
- If you have a form, put the mixture in it; if not, simply measure out small portions with a regular spoon and put them on a baking sheet moistened with water. Sprinkle plenty of powdered sugar with the future dessert and refrigerate for two to three hours to set.
Sugar-free marshmallows with chili pepper and raspberries
Ingredients:
- 250 grams of applesauce.
- 300 grams of raspberries.
- Half a small chili pepper.
- A mixture of agar-agar.
- 1.5 tablespoons of honey.
- 4 egg whites.
Cooking process:
- Agar-agar mixture pour 100 ml in cold water. Leave the mixture to swell for about fifteen minutes. To make the raspberry puree more tender, rinse the berries well and chop them in a blender. After grinding the raspberries through a fine sieve, so that all the bones remain in it.
- In a small saucepan, mix applesauce, raspberries, agar-agar mixture and chili pepper, previously peeled from the seeds. This mixture should be cooked over low heat for 3 minutes.
- Beat the whites in a lush mass, add honey and continue whipping. Then, slowly, pour the raspberry mixture into the protein and honey and continue to beat until the mixture is tripled.
- After transfer the mixture to the molds, separating a little mixture with a spoon or a pastry syringe. Leave the marshmallows cooled in the refrigerator for 12 hours. When the marshmallow hardens, you can decorate it with mint leaves and fresh raspberries.
Diet Marshmallow
Ingredients:
- 3 pcs. egg white (sawn eggs)
- 1⁄2 teaspoon stevia sugar substitute.
- 200 grams of applesauce (baby food)
- 1 gram of salt.
- 2 teaspoons agar-agar mixture.
Cooking process:
- The agar-agar mixture must be diluted in cold water and left to fully swell for about forty minutes. After we add baby puree to it and mix everything well.
- On low heat, bring our mixture to a boil, detect for a couple of minutes and remove from the stove.
- Beat the protein and salt, mix and add to our syrup. Mix everything well and pour the mixture into molds. After we put the future marshmallows in the refrigerator for twelve hours.
- Ready marshmallows can be decorated with a small slice of orange or a slice of banana.
